Red Sweet Potato Curry
from the book Isa Does It by Isa Chandra Moskowitz, page 160

For the curry:
2 cups mashed sweet potatoes
3 cloves minced garlic
1 Tbsp minced ginger
2 tsp peanut oil
3 Tbsp red curry paste
2 cups vegetable broth Note: I use about half this amount of broth, so the curry is thicker.
2 star anise
1 15 oz can lite coconut milk
2 Tbsp soy sauce
1/2 tsp salt
Sriracha
Lime juice

For the veggies:
1 1/2 cups thinly sliced shallots
1 Tbsp peanut oil
1 red bell pepper, seeded and thinly sliced
1/2 lb green beans, cut in 1 inch pieces
1 lb cauliflower, cut in small florets
1/2 cup water
1 15 oz can adzuki beans, rinsed and drained

Saute the ginger and garlic in the oil for about a minute, stirring often. Mix in curry paste and stir for another minute. Add veggie broth and star anise, cover, boil about 5 minutes. Remove the star anise and lower to a simmer. Add sweet potato, coconut milk, soy sauce and salt. Mash well. Add sriracha and lime juice to taste.

Preheat a large pan over medium high heat. Saute the shallots in the oil with a pinch of salt about 5 minutes. Add red pepper and green beans and saute another 5 minutes. Add cauliflower and 1/2 cup water, immediately cover and steam for 3 minutes.

Put veggies and beans in the curry pot. Let sit about 10 minutes for the flavors to marry.

Serve over jasmine rice; garnish with cilantro and lime wedges.

I think if you eat meat, you could sub some browned chicken breast chunks for the beans...or add shrimp. I often sub chickpeas for the adzuki beans, which are hard to find.
