Once every week or so I batch cook for the freezer. Jonah, my two-year-old, is really rather picky and I need some Jonah-approved breakfasts ready to go for when we have morning commitments. Other than cheerios (which takes him forever to eat) buckwheat-pancakes are his favorite morning meal. He'll eat those with some speed, actually.

I'd like to make a couple batches of silver-dollar sized pancakes...this recipe has an egg in it...

I've never frozen pancakes, and wonder if there is anything to freezing them I should know. Do they thaw well (texture wise)? How long would they keep in the freezer? Any packing tips?

They are fine texture wise. I don't know how long you can keep them. But be sure to put waxed paper in between to make it easy to separate them.

I used to do this too - just froze my regular pancake recipe. I reheated them in the toaster; a skillet would work, too, but I think they'd get soggy in the microwave.

A Christ-Centered Home ... Are we being conditioned by our society to rely more upon "The Experts" instead of paying the cost ourselves to seek the Lord, study His Word, and be led by His Holy Spirit? Not that we can't learn from other godly Christians, this is a valid Biblical method, but it shouldn't ever be a substitute for the Holy Spirit in our lives.
