I'd like to make my own. I have leftover chicken breast and also homemade broth (in qt. bags). I want it filling, not skimpy.

I use a pot of HM broth, a goodly amount of diced chicken, a few diced carrots, a few celery stalks diced, some diced onion (blend of white, yellow and green is yummy), some diced mixed colors of bell peppers (optional), lots of fresh garlic, a 1/2 inch fresh ginger, fresh cracked pepper, pinch of sea salt, fresh parsley (or dried), a bay leaf, some dried thyme. Cook everything down a bit until veggies are el dente (hate mushified veggies) and then add about 2 cups of wide egg noodles. Allow to cook but do not overcook. Hearty and delicious!!

To make it more filling, this is what I do to a basic recipe.

2 tablespoons butter with 2 tablespoons flour. Melt butter, then add the flour. Allow to bubble. Add two cups of soup to the mix and allow to come to a boil. When that has thickened, return it to the main pot and bring to boil while stirring.

Then beat 3 eggs until frothy. Add two cups of thickened soup to the eggs. Beat well, and return to main pot.

Or another alternative is to add a cup or two of velveeta to the soup to thicken it, and make it creamy. Of course, adding velveeta to homemade soup kind of negates all the health benefits. Wink

Thanks Tracy. I put the meat in the freezer, but I'm going to try this once I get to the store and get some celery, etc. Fall is here and it sounds so yummy!!
