I want to make some pickles! [message #567871] Sun, 06 September 2009 21:41 Go to next message

When I was not quite a preteen I won a jar of homemade pickles at a small county fair...and ate them within a day. I then proceeded to beg my country grandmother to allow me some of her own, homemade pickles (she canned a lot...the entire wall on the stairway down to the basement was nothing but top to bottom shelves filled with her homemade canned produce. I promptly ate another two jars in that day of complete summer freedom, got sick and never ate another pickle, whole or speared.

But now I'm feeling nostalgic, and would like to make my own rather than purchasing something off the grocery shelf. Grandma has passed away and I do not have canning experience or a recipe...so I'm asking you to share a tried and true recipe for homemade pickles.

I think I posted a refrigerator pickle recipe somewhere on this board...It's simple and just makes a couple of jars. You don't even need to process them! (But...they have to be kept in the fridge and only keep a few weeks...the recipe says 2 weeks, but we've kept them 6 or 8, I'm sure).

I'll see if I can find it for you.

Here is my grandpa's recipe for pickles. What's nice about this is you can make up the liquid but do one jar at a time if you wanted & put the rest of the liquid in the fridge.

Papaw's Bread & Butter Pickles

Small cucumbers are best just be sure they dont have the wax coating.
Put cut up cucumbers in a pint canning jar up to the neck.
Add 3 peeled, whole cloves of garlic.
Add 2 teaspoons of dill seed (not dill weed).

Bring to a rolling boil: 1 quart vinegar, 3 quarts water, 1 cup ice cream salt & 1 heaping teaspoon alum - stirring frequently.

Pour hot liquid over cucumbers and garlic in jar.
Place lids on jar and turn upside down to seal. Let sit for at least 1 month before eating.

The remainder of liquid can be kept in the fridge for later use. Just bring it back to a rolling boil.

"Just Some Quotes" ... Today, I'd just like to share some quotes that I have written down in my reading recently. Afterall, this is a feature for quotes. *grin*" Books quoted include Shepherding a Child's Heart, For the Children's Sake, Keep a Quiet Heart, and The Bait of Satan.
