Dawn was asking in homemaking what you could do with oat bran, so I decided to post this recipe. It's very flexible.

OAT BRAN MUFFINS

1 C oat bran
1 C ww pastry flour
1 T baking powder
1/2 t salt
1/4 C brown sugar

2 eggs, beaten
2 T oil
1/4 C honey
1/4 C applesauce
1 C milk
1/4 t almond extract
1 t vanilla

Stir together the dry ingredients. Beat the wet ingredients into the eggs. Mix dry & wet together until just moist. Bake @ 375* for 15-20 mins. Makes 12-15 muffins.

Coconut Macaroon Muffins

Add 1/2 C unsweetened coconut

Chocolate Macaroon Muffins

Add 3T cocoa

ANITA'S OAT BRAN MUFFINS

The original recipe was very healthy--if you want a very healthy recipe, remove the ww flour & use oat bran, making a total of 2 C oat bran. You can also use bananas in place of the applesauce.(Don't add almond extract, tho.)

Getting off to a GOOD start! (And "Staying on Task") ... Public schools start back in our area this week so it's time to start keeping records again.... I trust you all woke up at the crack of dawn, kissed your husband, did aerobics, showered, got dressed in your prettiest "Homeschool Mom-Teacher" dress, powdered your nose, prepared a wonderful HOT breakfast for your family (who are all tidily dressed in matching outfits by now) and cleaned up the house so you could start the new school year off in tip-top shape! No?! Whew...well, there's still hope...thankfully, successful homeschool days don't depend on all those steps. *grin*
