Another FAVORITE recipe from the Kelley household!

Coffee Coffee Cake

Preheat oven to 350

Whisk together:

1 1/2 cup flour
1 1/2 tsp. Baking Powder
1/8 tsp salt
3/4 tsp cinnamon
1/2 cup brown sugar
1/2 cup sugar
1 1/2 Tablespoon instant coffee

Cut in:

1/4 cup butter (marg.)
1/4 cup Crisco

TAKE OUT one cup of mixture and set aside for topping!

Stir in:

1/2 cup milk
I egg slightly beaten

Spray 9" square cake pan. Pour batter into pan and spread evenly. Sprinkle evenly with reserved topping mixture.

Bake at 350 for 28 minutes. Let cool in pan on wire rack.

I made this today, Denna. It is really good! Have you ever tried putting chocolate chips in it? I bet that would be yummy! Smile

That is so funny that you asked! My hand actually hovered over the chocolate chips the other day when I was making this coffee cake. Now that I have another mom's blessing - I'M GOING FOR IT! Laughing

This is a great recipe! I've made it a couple of times now and I'm tempted to make it again today. The second time I made it, I had planned on including some mini chocolate chips but I forgot to include them. I do think the mini chips would be best and not too many, just enough to give it a bit of chocolate taste. It is actually really good without the chocolate.

I've thought about trying it without the coffee. It has such a great texture and I love the topping. I'm sure there are other options.

I love the coffee flavor but I love experimenting. Smile

She works for the Institute for Excellence in Writing (Andrew Pudewa), and still has one ds in high school -- so she must be super super busy. She last visited in Oct. Laura (in VA) and I got to meet her this past summer! She's delightful (as is Laura!).
