I have a touch of something coming on, the weather is cold and damp...and instead of buying a chicken-pot-pie (my comfort food) I bought two roasted chickens because they smelled so good. I've taken all the meat and bones out and have a nice six cup container full of shredded chicken. I had hoped to see if pre-roasted chicken would have made good bones to start a broth (to turn into chicken soup) but my husband - I love him - insisted on, ladies, he eats down to the bone and was practically grabbing everything I set down and snacking...so carcass trashed.

I honestly do not have the time to whip up a pot pie of my own, and my brain is so "but this is supposed to be chicken soup!!!!" that I am drawing an absolute blank over making something simple but also delicious. The only alternative is to throw it on a plate with veggie sides and right now that sounds healthy, but oh so unappetizing.

Any "put this and that" together with it type comfort foods? The only restriction I must put forward immediately is no cream soups. I'll be left to eat it all, if I add any "cream of" because of my picky fellers.

Good old chicken with a dash of bbq sauce on a bun

Chicken tacos - I actually do seasoned chicken nachos instead of tacos

On the fly here but we love chicken wraps. Tortillas, lettuce, favorite dressing and add-ins are endless. We like cheddar, Ranch dressing, tomatoes, etc., but you could add in olives, peppers, etc. Sometimes I'll do julienne veggies for the majority of the wrap and just add a bit of chicken in.

I did mix with bbq sauce, and another reheated with a little bit of gravy.
