Autumn and Winter batch cooking is a natural for me...but the Spring and Summer (which essentially are the same thing here in swamp-like Florida) are another matter. With a night-shift husband and a picky four year old, I have resorted to sandwiches most times (with breakfast already being carb heavy). The truth is, I'm bored and drawing a blank. This spring / summer, I'm going to ignore my son, for better or worse, when it comes to meal prep. I've tried. He's going to have to learn to eat. However, we are also on the run - a lot. That or I'm plain physically worn to the nub. So, I want to batch prep ALL of our meals, as much as possible, but also give me an edge on healthy eating (so bread and pasta free as possible since those are not processed as well in my body).

I'm hoping you ladies can give me some real meal life tips in this area. I'm able to shop in one day, prep that evening or the following day...but I'd like a 5 day meal prep that can stay fridge-bound vs frozen...and if there's a stock building up of something for the freezer to outlast the week, I'm happy. I've also posted a question about mason jar salads...I am trying that out for our dinners.

Hmmm.... Do you grill? I live by the grill in the summer. That and lots of fruit. I have been known to dress up fruit with a drizzle of chocolate for when my children were younger. We also do a refrigerator stocked with sliced vegies. Surprisingly, green peppers were always a hit when my guys were little.

Homemade lunchables were a mainstay for beach/baseball/outside days. I invested in the divided Tupperware and it was worth every penny.

Could you do English muffin pizzas?

We grill multiple types of meats at one time

Large green salad and fruit salad in fridge

I made breakfast burritos, pancakes, and sausage biscuits for the freezer this morning.

I am finding that most of my regular meals freeze just fine. I recently cooked a turkey & made Turkey Divan, Turkey a la King and Turkey Taquitos, & put some in the freezer. For the Taquitos, I wrapped them in parchment paper after they cooled and now I can defrost & toast in the toaster oven (or regular oven for that matter.)

I have been reheating a lot of meals since going back to work, & the freezer meals come out just as good as reheated. Neither one comes out quite as good as fresh.

I have found you can make just about any recipe low-carb if you make your own zucchini noodles, spaghetti squash and quinoa, and buy low-carb tortillas. Or just leave out the carb & make the rest of the recipe.

I've found that I like quinoa much better if I soak it overnight first. You soak it on the counter in double the water and a teaspoon of vinegar per cup of water. You still have to rinse thoroughly before cooking, but I think the taste is much better. It also takes less time to cook.

"God's Beautiful Artistry" ... I spent a good part of this holiday weekend paddling around a creek, the Glebe near the Potomac River & the Chesapeake Bay in Virginia. The peacefulness of this quiet time alone with God's creation was refreshing.
