Public schools start back in our area this week so it's time to start keeping records again.... I trust you all woke up at the crack of dawn, kissed your husband, did aerobics, showered, got dressed in your prettiest "Homeschool Mom-Teacher" dress, powdered your nose, prepared a wonderful HOT breakfast for your family (who are all tidily dressed in matching outfits by now) and cleaned up the house so you could start the new school year off in tip-top shape! No?! Whew...well, there's still hope...thankfully, successful homeschool days don't depend on all those steps. *grin* [Support our Advertisers!]

1 large sweet potato, cooked
2 eggs
1 tbsp vanilla
10 oz dried dates, soaked for an hour, then drained
1/2 cup melted coconut oil (light olive oil can be used but the
coconut adds great flavor)
1 tbsp baking powder
1 cup cocoa

Process the dates, adding water as necessary to make a paste. Add eggs, vanilla, baking powder, coconut oil, and sweet potato and process until smooth, then add cocoa.

Line a square 8x8 glass pan with parchment paper. Oil the paper. Spread brownie mix in the pan and bake at 350 until firm to touch. Allow to cool before serving.

Homeschool and Housework! ... Does the combination of homeschool and housework seem like oil and water--they just don't mix? It used to seem like we were either successful in homeschooling or housework but never both in the same day.
