Here you are Char..

2 packages (10 oz. ea) frozen chopped broccoli (or fresh)
2 cups crushed seasoned stuffing
1 cup grated parmesan cheese
6 eggs, lightly beaten
1/2 cup butter or margarine, softened
1/2 tsp. salt
1/4 tsp. pepper

Cook broccoli according to package directions; drain and place in a bowl. Add the remaining ingredients; mix well. Shape into 1" balls. Place in a greased 15 x 10 (or 13 x 9, which is what I have!) baking dish. Bake at 350 for 11-12 minutes or until golden brown. Or place in a single layer in a freezer and freeze for up to 1 month. YIELD: about 5 dozen.

I made these today. The batch made 67 of them and at least 1/2 of them are GONE! Shocked

For some reason - while at the store last night, I bought spinach instead of broccoli!! Confused I did have some fresh broccoli though so I used 1 box of spinach and the rest fresh chopped broccoli.

I told the kids they were called broccoli bites!! They love them!

My 4 year old used to eat broccoli raw with dip, then suddenly decided she didn't like it that way anymore, so I've had to come up with some new ways to make it. Rolling Eyes

These are on our Christmas menu again this year! Smile I've made them with broccoli and with spinach and I think we liked the spinach the best, but they're both wonderful!
