We had this last night. It is simple and nutritious. I love meals that way.

1 bunch of asparagus
16 oz Bow-tie pasta (or any similar pasta. We used rotini)
Zest of one lemon--I used lemon juice maybe 2 tsp. instead
2 TBSP of olive oil

snip up asparagus into 1 inch pieces. Set tips aside in separate bowl.

Place stalk pieces in 5 quarts boiling water. Boil about 7-9 minutes until stalks are soft. Remove with slotted spoon (do not drain water). Place asparagus (not tips) in blender with zest, oil, and 3/4 cup of asparagus water. Puree.

Cook tips in water for 3-4 minutes. Remove with slotted spoon add to pureed mix. (don't puree)

Cook pasta in asparagus water until al dente. Reserve 1/2 cup water. Drain pasta and return to pot.

Mix puree, pasta, tips, and reserved water.

Serve & enjoy. Smile


I forgot to add the 1/2 cup of water add it made for a creamy dish. We served it with bread and salad.
I heard that it taste good with grilled salmon.

Woohoo!!

I thought of this recipe when I saw that asparagus was on sale.

Couldn't find it in my recipes, so I had to think if I shared it here or not.

Glad I shared it and glad that I found it again.

Made this tonight and added canned salmon to it. Confused

I do not recommend doing that. It just was weird and not as palatable.

This time I used a lemon. I recommend that you don't use a steak knife to get the zest Wink

We didn't seem to have enough tips, so I think that next time I make it I will reserve some of the stalks.

Salt & pepper to taste

I have made it too (I did add the salt and pepper). It was pretty good!
